Gluten-Free!



For those of you those with coeliac disease, or anyone who wants to look at alternative ways to create amazing wholesome food without gluten, then this is the place for you!

Gluten-free food shouldn't compensate on taste and in fact can be just as delicious as those with gluten, so brace yourself for some deliciousness


Gluten-Free Pancakes


The pancake is a delicious thing! Drizzled with some maple syrup, peanut butter, or even on their own they are mouthwatering. They can be eaten for any meal which makes them an ideal addition to anyones diet, and the best thing is that they can be easily made vegan with the substitution of milk for soya or nut milk and the substitution of eggs for chickpea flour and water This gluten-free version doesn't compensate on taste and in fact, noone would know they were gluten-free (which is how it should be eh!)
When you try these pancakes you'll be hooked. You'll be having them every day!

Ingredients
  • 200 g Plain Flour Free From Gluten

  • 2 Eggs (or 1tbsp chickpea flour + 2tbsp water)

  • 500 ml Milk (or Vegan Milk)

  • 1 tbsp Oil


Method
  1. Put the flour, egg (if using swops add the chickpea flour + water) and half the milk into a bowl. Beat to a smooth paste then stir in the remaining milk to make a thin batter. Refrigerate the batter for at least an hour or up to 12 hours.

  2. Put a little oil into a frying pan, roll it around to cover the surface and heat until almost smoking.

  3. Stir the batter, spoon some into the pan and roll it out to the edges

  4. Cook until the base is golden then turn it over and cook the other side.

  5. Repeat until the batter is used.
  6. Serve with sweet or savoury fillings.
